The red beans are on the stove along with the gumbo for tonights service and I have a twenty minute break before I have to get back in the kitchen so I thought I’d throw a post up real quick, as I’m really excited about our latest addition to the local, and you know me and excitement, I need to let it out….!

June 26, last Beer Night at NOLA


Hola friends!

Quick and last minute note that tonight will be our last Beer Night with Broeders Artesnal here in Palermo.

But don’t worry!

It’s because we’re so close to opening the gastropub and we need to stock up on as much craft beer as possible!

The past year has been a blast working with brothers Marce and Ticol (aka Francisco) on Thursday nights. We experimented with countless fried chicken & biscuit recipes as well as sampled some of their interesting brews such as Golden Rosemary, Basil IPA and Pecan Stout.

This is very exciting news!

Aesthetically, the space…. I barely recognize it!

No more massive holes in the walls. Oh wait, we actually have walls!!


NOLA pub has exposed brick!


You have NO idea how happy this makes me!!

I’ve requested this from NOLA pub Day #1.

No, it’s not a fun job, but neither is cleaning out deep fryers or polishing wine glasses.

We all have parts of our work that we don’t want to do, BUT WE DO THEM.

Heated discussions made these bricks appear!

Don’t tell me I can’t, I will just stand taller.

flashback Fierro Sunday


Last Sunday Ticol and I treated ourselves to a fancy brunch at the Fierro Hotel. It was also the perfect excuse to grab my new camera and practice some food photos in the natural light!
It all happened very last minute on Easter Sunday.

We woke in the early afternoon with big appetites and no desire to jump straight in the kitchen as we had service that night at NOLA for 18 guests. (Days of service means 5 hours of prep + 3 hour dinner + 1 hour cleanup. It’s a lot of kitchen time and I try to stay clear of the cocina beforehand.)

We called Fierro and they told us they were booked however if anything opened up they’d give us a buzz.

And then they did and we threw ourselves together and jumped in a cab.

It was exactly how I remembered it….


OPENING, Reál Revolucion Palermo Soho


A new Mexican restaurant, Reál Revolucion, opened in Palermo Soho a few weeks back.

The space is huge and it’s about a block from Plaza Serrano, on Honduras between Thames and Uriarte.

I’ve only been once, but I can proudly say it’s the best Mexican food I’ve had in Buenos Aires. NO, that doesn’t necessary carry much weight considering the Mexican food scene is rather horrendous, I know…

Things are moving along over here on our side of Palermo!

It’s so interesting to see the process from start to finish.

So bare in the beginning. Then a complete fucking mess. Stripped to the bones and rebuilt with purpose and care. I’m so pumped to see the final product!!
