Since breaking my ankle (a dreadful 2 weeks ago) I have accepted, no matter how much it kills me, that I have to be dependent on others.
This is challenging for those of us who are 100% on our own and don’t rely or trust on others for anything.
I’d rather fail at something than be let down by someone I believe in.
Lately I’ve had to ignore this attitude of mine which has left me feeling weak and vulnerable. It is complete shit.
I decided to attempt a small sweet gesture for my boyfriend who has been my ‘second leg’ since the incident, so I prepared a simple brunch.
While he slept into the early afternoon I hobbled around the kitchen (with Mazzy Star in the background) enjoying every second of my peaceful independence.
It was quite lovely, and slightly empowering.
Simple Brunch Menu ::
-olive bagel lightly toasted with rosemary olive oil and coarse sea salt
-sesame bagel toasted with chive & peppercorn cream cheese, thinly sliced tomato, and red onion
-freshly squeezed grapefruit & orange juice
Beurre Composé & Flavored Cream Cheese ::
Flavoring cream cheese or butters (beurre composé) is beyond simple, and they really brighten up a dish! Nothing like a fat juicy steak with a slice of herbed compound butter melting away.
To make flavored cream cheese or compound butters you need to start by first softening them. Remove the butter (NOT margarine) or cream cheese from the fridge and allow to get to room temperature/soften. Pick your flavoring agents- fresh herbs, scallions, citrus, spices, truffles, peppercorns, cheese, etc. Finely chop or grate your flavors and incorporate them into cream cheese/butter using a fork and season with salt & pepper. Cover and return to fridge OR roll them into a log for perfect wheels.
