I mean this weather is just too good for that! Who wants to be stuck inside when Buenos Aires is looking this fine?
Sunny warm days mean crispy salads, endless citrus and outdoor dining as often as possible.
And as much as I loooove spending countless hours at my favorite outdoors cafes I don’t always have 100 pesos to drop on lunch, especially when I can do it at home for a fraction of the cost!
New plan- healthy & substantial meal at home then computer time at cafe with tea or a fresh juice. The bill is a third of the price and the food is generally fresher & tastier. Sold!
So last week I threw together these fun avocado toast with leftovers in the kitchen. If you’re trying to stay away from gluten you can substitute the bread with quinoa, brown rice, corn tortillas or a big bowl of leaves.
Avocado has loads of health benefits even though many people think it’s ‘fatty’. Stop counting calories and eat real food, especially plants!
If you don’t have maracuya (passion fruit) on your part of the world feel free to use a big squeeze of fresh citrus such as lime, orange or lemon. And in case you didn’t know, orange & avocado go really nice together!
Maracuya Avocado Toast ::
- red onion
- sesame oil
- bread, toasted (or gluten free substitute)
- salt & pepper
Chop the jalapeño and slice your avocado in half, pull out the pit and using a spoon scoop out the flesh and toss in a mixing bowl.
Add two big spoonfuls of maracuya pulp & seeds (or citrus) and a sprinkle of salt. Using a fork coarsely mash everything together. Don’t over work it by making it creamy. We want texture!
Toast the bread, dice the tomatoes and slice the red onion. In a separate bowl add the tomatoes, onion and a dash of sesame oil. Give it a lite sprinkle of salt & mix.
