Yesterday I cooked NON stop for a catering gig, on one foot.
The event was for a surprise birthday merienda (afternoon tea time) with both sweet and savory finger foods.
The menu was a bit diverse, a little Southern/Mexican/French/Middle Eastern combo and the end result was 20 very stuffed and happy Argentinos.
I made two different empanadas, Mexican veggie and boeuf bourguignon, and ended up with lots of Mexican veggie leftovers.
People are so easily turned off by leftovers. Especially pasta.
I don’t really get it. I love them!!
It means I don’t have to cook as much the next day and it forces me to be creative.
How can I use these leftovers to make a new dish? What different flavors can I add?
Half the time, the second dish trumps the original. I love these moments. It’s always the unknown that cranks out my best dishes.
I wound up using some of the veggies in an avocado butter lettuce salad with a honey lime vinaigrette. Tonight I’ll serve it as a salsa over grilled fish and brown rice.
Mexican Veggies ::
- fresh corn on the cob
- black beans
- roasted red pepper
- onion, small dice
- garlic, minced
- jalapeño, minced
- cilantro, coarsely chopped
- olive oil
- salt & pepper
Cook black beans.
Cut corn off cob and slice other vegetables. Heat a wok over high heat and add a splash of oil. Add corn and onion and saute for about 3-4 minutes tossing often. Add garlic, jalapeño, red pepper, a dash of salt and a big pinch of cumin. Continue cooking and tossing til garlic is aromatic. Using a slotted spoon add the beans and toss well til everything is mixed together. Kill the heat, add cilantro and fresh cracked pepper and give it a few more tosses. Taste and adjust seasoning if necessary.
If using to make empanadas allow to cool before stuffing or transfer to the fridge and serve with salad. Keep warm and serve over brown rice and/or fish. Use this as a salsa for tacos or nachos. OR puree the beans and make veggie burgers.
