Deals on meals, BANGIN beans ‘n rice, 3 pesos

Can’t get much healthier or cheaper than beans ‘n rice.

Here in Buenos Aires beans are NOT COMMON even though you can find them at any grocery store or dietica

This dish is quite popular in Brazil, known as Feijoada, but this recipe has more of a Mexican twist.

No fancy equipment is necessary, just some time.

FACTS-  When beans and rice are served together they form a complete protein since all essential amino acids are present.  In addition to protein this dish is packed with fiber, magnesium, and GOOD CARBS

If you have the essential ingredients in your kitchen this recipe will cost you 16 pesos and feeds 6 dinner portions.   That means each portion cost roughly 3 pesos!!

I always buy beans, rice, and legumes from Casa Naturista- 4.50 7 pesos for 500 grams as opposed to the 17 peso price at my grocery AND it’s cheaper than china town.  Beat that, BA!

BANGIN’ Beans ‘n Rice

  • 500g black beans
  • 500g long grain brown rice
  • 2 large onions
  • 7-10 garlic cloves
  • 1/2 kilo roma tomatoes
  • 1/2 kilo lemon
  • 1 jalapeno
  • 1 small white cabbage
  • mayonaise
  • honey
  • vinegar
  • cilantro
  • salt & pepper

Beans are best when soaked in water overnight.  Rinse them under cool water, pick out any stones and place them in a big pot and submerge them in plenty of water and allow to rest over night.  Soaking the beans helps soften them and supposedly takes away their farty side effects however in my household I’ve come to terms that this is only a myth, right boys?  I still choose to soak them.

Take your soaked beans, discard the liquid, and give them a good rinse.  Return them to the pot, cover in water with a few extra inches, and place over medium/high heat.  Bring to boil, lower to simmer, and allow to cook for 3-4 hours or until soft.  Give them a stir every 30 minutes to make sure nothing is sticking to the bottom and constantly add more water.  You always want your beans submerged by 1-2 inches.  DO NOT season with salt until the end.

While the beans are cooking prep your slaw.  Finely slice your cabbage (on a mandolin, it takes 10 seconds!) and place in large bowl.  In a small bowl whisk together a giant squeeze of mayo, a couple tablespoons of vinegar (any will do, I like apple or rice), the juice of one lemon, a spoonful of honey, and a big dash of salt and pepper.   Mix with sliced cabbage and set aside.

Salsa.  Dice the tomato, 1 onion, and jalapeno and mix in small bowl.  Add the juice of one lemon, season with salt and set aside.

Mince the garlic and small dice the other onion.  Place a wok or saute pan over high heat, add a touch of oil and the onion and garlic.  Cook for about 1 minute until aromatic and lightly brown.  Add to beans.

Combine the brown rice with 1000mL of water (1 portion of rice to 2 portions of water) in a small-ish pot.  Bring to a boil, lower to a simmer, toss on the lid and set your timer for the amount stated on the package.  Kill the heat, leave the lid on for 5 minutes, then fluff with fork.

When the beans are nice and soft add a good chunk of salt, cook for 10 minutes and mix with rice.

To serve- place bean mixture in bowls, add a big spoonful of salsa, and top it off with slaw and minced cilantro.

Voy a intentar español para la series Deals on Meal, un concepto nuevo que enseña a otros cocineros como preparar comida saludable y rica por menos de 20 pesos.  Primera cosa, perdóneme por mis errores de español!!  Imagino que habrá mucho, todavia estoy aprendiendo!

Esta receta es como Feijoada de Brasil pero tiene un toque de Mexico.  El plato tiene MUCHA proteina, fibra, y magnesio asi que es una buena opción de la carne y los carbohidratos malos- pasta, pizza, empanadas.  Si tiene los ingredientes esenciales entonces todos otros ingredientes costaron 16 pesos y se alimentan 6 porciones de comida asi que es 3 pesos cada plato!  Siempre compro mis porotos, arroces, legumbres en la Casa Naturista, una dietica muy buena y que es mas barato que los supers y el barrio chino.

BANGIN’ Beans ‘n Rice

  • 500g porotos negros
  • 500g arroz integral largo y fino
  • 2 cebollas grandes
  • 7-10 dientes de ajo
  • 1/2 kilo tomate perita
  • 1/2 kilo límon
  • 1 chili jalapeno
  • repollo blanco chico
  • mayonesa
  • miel
  • vinagre
  • cilantro
  • sal y pimienta

Los porotos necesitan mucho tiempo para cocinarse.  Es mejor ponerlos en mucha agua para remojar durante la noche.  Supuestamente este ayuda con los efectos secundarios de gases y el resultado son granos mas suaves.

Tomar los porotos remojados y ponerse en una olla grande con mucha agua encima de un fuego medio/alto fuego.  Hervir, bajar un fuego lento y cocinarlos por 3-4 horas hasta que estan suaves.  Cada 30 minutos revolverlos para prevenir que se peguen.  No poner sal hasta el ultimo momento!!

Mientras que los porotos se cocinan, preparar la ensalada de repollo.  Cortar el repollo en rabanadas finas y ponerlos en un bol grande.  En un bol chiquito mezclar 3-4 cucharadas de mayonesa, 2-3 cucharadas de vinagre (el que prefiera, me gustan los de manzana o arroz), jugo de un limon, 2 cucharadas de miel, sal y pimienta.

La salsa.  Cortar los tomates perita, una cebolla y el jalapeno en dados chiquitos.  Mezclarlos con el jugo de un limon, sal, y pimienta.

Cocinar el arroz integral con 1000mL de agua (1 parte de arroz a 2 partes de agua).  Hervir, bajar un fuego lento y, poner la tapa y cocinarlo segun del  tiempo por la paquete.  Para el fuego, reposar por 5 minutos y airear con un tenedor.

Picar los dientes de ajo y cortar la otra cebolla en dados chiquitos.  Cocinarlos en un wok o sarten encima de fuego alto por 1-2 minutos hasta que este muy aromatica, 1-2 minutos.  Ponerlos con los porotos y 2-3 cucharadas de sal y continuar cocinando por 10 minutos.  Probarlos y ajustar los condimentos si es necesario.  Agregar el arroz, mezclar bien, y parar el fuego.

Para servir.  Poner dos cucharas grandes de los porotos/arroz en un bol.  Colocar una cucharita de salsa y entonces una montañita del repollo y un poco cilantro picado.
