I was faced with this predicament over and over last year while bouncing around Central and South America.
Hostel kitchens are VERY basic and the lack of equipment forced me to improvise. AND on top of that, I’m working with local produce without a clue as to what it is or how it’s prepared. Excellent! But somehow I magically pulled it together and all eyes were on our table at dinner time! The tool I foolishly hoped for in route to the next kitchen? A vegetable peeler. Did I ever come across one? No.
After leaving the Amazon I cracked and bought a pairing knife in Lima. I couldn’t take it anymore. I mean, how am I suppose to cut through thick green plantains with a butter knife??? And for only $12, there was no way I was passing it up….
