Spicy blackened chicken pasta

My dad does this thing where he takes a traditional Cajun dish, adds his Italian touch and discovers a new alternative.

His tastiest invention is BBQ shrimp pasta, an old New Orleans recipe of shrimp swimming in a butter/herb/lemon sauce served with warm French bread.

In my father’s eyes bread is more carb threatening than noodles, and he thinks pasta is a better replacement to soak up all that rich flavorful sauce.  Whatever his reasoning is, it works, well.

This recipe is one of mine and is just as good over rice or with fish instead of chicken.  It works best when tomatoes are super ripe and in season since the sauce is made from scratch, as in no canned tomatoes.

Blackened Chicken Pasta  ::

  • 2 chicken breasts, skinned and trimmed
  • holy trinity- onion, green pepper, celery,  cut in .5 inch pieces
  • jalapeno, minced
  • 3-4 cloves of garlic, minced
  • 1 kilo of roma tomato, coarsely chopped
  • tomato paste (optional)
  • fresh thyme
  • big splash of cream
  • butter
  • paprika
  • 250g tasso (optional)
  • 2 cups chicken stock or water
  • linguine or other pasta
  • lemon
  • green onion, sliced
  • Tony’s
  • salt & pepper

Set a big pot of salted water over high heat and bring to a boil.

Place a nicely cured cast iron skillet over high heat and allow to get REALLY HOT.  Smoking point is what you’re looking for.  Do NOT add any oil/butter to the skillet.  Generously season the chicken breasts with Tony’s or other Creole seasoning and place in skillet once it’s ready.  After 3-4 minutes, reduce the heat to medium high.  Flip the chicken once it’s nice and dark (about 8-10 minutes into cooking time) and place half a lemon on top of each breast, cut side down.  Continue cooking til the internal temperature is 155° and remove from pan.

Before we start on the sauce toss your pasta into the water, cook til al dente, and drain.

Slice tasso into .25 inch pieces and add to hot cast iron.  Cook until most of the fat has rendered out and remove tasso.  Add holy trinity and jalapeño and saute til soft.  Toss in garlic and a spoonful of tomato paste.  Once the garlic is aromatic add tomatoes, fresh thyme, about a teaspoon of paprika, cooked tasso and a big dash of salt.  After about 10 minutes add chicken stock and allow to simmer for 15 minutes.  Finish the sauce with a splash of cream and a tablespoon or two of butter.  Continue to stir the sauce until the butter is melted.  Do not bring the sauce to a simmer once these have been added.  Taste and adjust seasoning.  It should have a strong kick which the pasta will balance out.

Transfer the pasta into the tomato sauce and mix well.  Taste and season if necessary.

To serve place a mountain of pasta in a deep bowl, sliced chicken on top and garnish with green onion.

Mi padre le gusta tomar un plato tradicional de Cajun, anade su toque itliano y descubre una nueva alternativa.  Su invención mas sabrosa es la pasta de camarones barbacoa, una receta vieja de Nueva Orleans, camarones nadando en salsa de mantequilla/hierba/limón servido con pan francés caliente.  En los ojos de mi padre, el pan es mas amenazante a nivel corbonos que los fideos y el piensa que la pasta es un reemplazo mejor para absorber la salsa riquisima.  Sea cual sea su razonamiento, funciona bien.

Esta receta es una de las mías, y es tan buena con arroz y/o pescado en lugar de fideos o pollo.  Funciona mejor cuando los tomates estan super maduros y en temporada ya que la salsa esta hecha desde cero, no de tomates enlatados.

Establecer una olla grande de agua salada a fuego fuerte y llevar a ebullición.

Colocar una sarten de herro fundido muy bien curada a fuego alto y esperar que este muy caliente.  estamos buscando el punto donde empieza a salir humo.  NO agregue aceite/manteca a la sartén.  Generosamente sazona las pechuga de pollo con Tony’s o otro condimento Creole y ponerlas en la sartén.  Despues de 3-4 minutos, baja el fuego a medio-alto.  Da la vuelta al pollo cuando este este oscuro (alrededor 8-10 minutos) y coloque la mitad de un limón encima de los pollos, la parte cortada hacia abajo.  Continuar cocinando hasta que la temperatura interna sea de 155 y retirar de la sartén.

Antes de comenzar con la salsa, tira la pasta en agua, cocina hasta que este al dente y escurrir.

Cortar tasso en .5 centimetros y añade a hierro fundido.  Cocina hasta que la mayoria de la grasa se haya rendido y retire el tasso.  Añadir el holy trinity y jalapeño, y saltee hasta que suave.  Mezcla el ajo y una cucharada de pasta de tomate.  Una vez que el ajo que es aromático, agregar los tomates, tomillo fresco, una cucharadita de pimentón (ahumado no dulce), tasso cocido, y una pizca grande de sal.  Después 10 muntos, añadir el caldo de pollo y deje que se cocine a fuego lento por 15 minutos.  Terminar la salsa con un toque de crema y una o dos cucharadas de manteca.  Seguir removiendo la salsa hasta que la mateca se derrita.  Pruebe y ajuste la sazón.  Debe tener una patada fuerte que la pasta se equilibrará.

Transfiera la pasta a la salsa de tomate y mezclar bien.  Pruebe y sazone si es necesario.

Para servir pon un montón de pasta en un bowl hondo, pollo en la parte superior y adornar con la cebolla verde.
